It would be interesting to see the actual church records instead of relying on secondary transcriptions, as I believe the surname "Schiddi" is just a bad transcription, or perhaps a bad original spelling.You don't see anything close to "Schiddi" in either the IGI or records at Ancestry.com for early NY.
My Jacob Sheets (b ~1716), on the other hand, was a farmer in Johnstown and he had sons who were farmers in nearby Caughnawaga.This is according to "The History and Master Roll of The King's Royal Regiment of New York", revised edition, by Cruikshank and Watt.Jacob was a loyalist in the Revolutionary war, and moved to Stormont Co., Ontario about 1782.
I have a copy of Jacob's will, where he states his daughter's first names, which where:
Mary
Sara
Lena
Catherine (not mentioned in the will, as she died prior to Jacob)
I believe that "Lena" (short for Magdalena) was Peter's wife.At least one record, the baptism of their daughter Mari Madalena in 1782 has her surname as Sheets.As evident by the following baptism (Records of the Reformed Protestant Dutch Church of Caughnawaga), Peter's wife did go by the name of "Lenah".

The above mentioned book also states that Jacob was of German origin, so the Sheets surname was likely spelled SCHUTZ back in Germany (with umlaut over the "U"), which then may have become SCHUETZ in America, before finally becoming SHEETS.The name SCHULTZ may have been confused with SCHUETZ, as it is only one letter off.
Anyway, that's my take on it.I can send you a copy of Jacob's will, if you want to have a look-see.
