My thoughts as well. I have been continuing to look through the original records on microfilm as well as compiled/transcribed records made from them. There are a few gaps in some of the baptism/birth records, most notably between 1722-1724. It is certainly possible that George is a son of Matthias who died young and was among the missing records. Germans often re-used names of deceased or removed children. On the other hand, from all I can find, there is no direct evidence that this youger (supposedly b. 1722) George is Matthais' son. We have no documentary evidence of George prior to 1748 or Matthias prior to 1744 (other than Helen Black's letter) in America. Since the German records from Edigheim do not begin until 1714, it is also entirely possible that George was Matthias' brother. There is evidence that Matthias' father was Philip Paul Jochem:

"Baptism: 28 March 1720.
Child: Maria Barbara.
Parents: Michel Krause citizen and member of the Court in Edigheim and his wife Maria Elisabeth, their daughter born the 25th of this month.
Godparents: Johann Matthes Jochem, true surviving son of the former Philip Jochem of Mörs, and Barbara Maria, true surviving daughter of the former Friedrich Ohngefehr, citizen and member of the Court in Edigheim."

I'll continue to look at Philip Paul Jochem's records to see if I can connect any other children, but so far the only other child of Philip Paul Jochem appears to be Johan Philip Jochem who on April 19, 1729 married Catharina Link, widow of Johannes Link. (Oskar Poller, Dei Einwohner von Oppau und Edigheim 1480-1813).

The earliest written record I can find asserting that this George was a son of Matthias is H.C. Smith...a good reference be aware of but not to be trusted without confirming documentation. The author, in his admirable attempt at unraveling Yoakum history, made many assumptive leaps and errors...completely understandable given the resources he had. The goal he set, however, was beyond the ability of any single lifetime.
