Thanks for the information from "The Wyckoff Family in America".

Subsequent to my query I found the baptism of Martin Wyckoff, son Peter and Lena [Magdalena Vandervoort, based on other evidence] Wyckoff, on 28 MAY 1769 at the DRC in New Brunswick Somerset Co, NJ.

Peter Wyckoff (115,15), son of Peter Claessen WYCKOFF and Maria DILDINE, was baptized (or born) on 22 JAN 1754, too late to have had a child baptized in 1769. Given his oldest son was named Martin and his second daughter was named Elizabeth, I believe Peter Wyckoff's parents were Martin Wyckoff (118) and Elizabeth Hubbard.
