I am not a Wilbanks descendant, but I noticed your query because it concerns Gwinnett County, GA, where my ancestors lived.In the county book of death records, there is no record of when Rachel Wilbanks Cain died, under either her maiden or married name.The only note about her husband James T. Cain's death is that he died about 1871.There is a note along with it:"10-25-1871 Adam POOL, admr, grdn of Rebecca J. MINOR."This information came from the county newspaper, the GWINNETT HERALD.
I believe Rebecca is listed in her grandparents' household in the 1870 census, under the wrong name.Here is what it says:
Subdivision 160, Cains Post Office, Gwinnett Co., GA 1870
dwelling #11, P. 117, 10 Aug 1870
WILLBANKS

I assume that Martha is not the same person as Rachel, who was born about 1842.These two records therefore would lead me to believe that Rachel herself had died by 1870.
