Sondag/Sonntag

In the Manitowoc County censuses up to c. 1930, my ancestors' family name was listed as "Sondag," but later it appears as "Sontag" and finally "Sonntag." They were German speaking, came from somewhere in Germany ("Sternbeck") in 1850 (Ship Franklin to New York) and settled in Two Rivers. There were already "cousins" there.

I remember hearing my grandfather discuss the Sontag to Sonntag name change but I was really small and don't recall the details.

Could the census takers have misspelled the name? Or is it likely that the spelling was changed to fit in better with the other Germans in the Two Rivers area?

The name "Sondag" is more common in Belgium, France, and far Western Germany, near the France border, and since we are not sure of the location of "Sternbeck" a change in spelling could be significant to our search.
