You will need to find out more from the Australian records (that is, the former surname of the "Spanish man").
Once you know his name, you should try to find a record in Australia of WHEN he arrived there (maybe on what ship, and it might give date of departure from Québec, Canada).
He likely departed Canada at Québec City itself - or he might have been living in Montréal or elsewhere before sailing from Canada. Québec CIty was the main point of departure to other countries, but many people also sailed fromMontréal. Depending on how long he was living in Canada, there may or may not be existing records of him there.

There is a minimum subscription required of AUD$10ºº, which lasts for 12 months, or expires after you have read 10 pages, whichever comes first. An interesting site - worth a visit and perhaps subscribing if you have research interests in Australia or New Zealand.

The National Archives of Canada in Ottawa have the following census records for Quebec: 1666-1681 (N); 1825, 1831, 1842 (HF);1851, 1861, 1871, 1881, 1891, 1901 (N). HF means they only list the head of the household, N means they list other people living there by name as well. They also have land petitions from 1764-1867.
Some passenger lists are available, from 1865-1919, depending what port they came into; the pre-1900 records are mostly for Québec City.

As of August, 1999 the archive will charge you $0.25 a page with a CAN$2ºº minimum per order. Cheques (in Canadian dollars) should be made out to "Ministre des Finances du Québec" (Ministry of Finance of Québec).
If you would like to request a birth, marriage or death certificate from the government for any record from 1900 on, you can write:

They will send you the necessary form. You can request it in English, unless you read and write French well. The fees are on the form.
