Is it Watts or is it Hunt?

I have a marriage certificate for my great grand parents John Goodey and Mary Ann Watts which took place at the Parish Church of St. Pancras on 11th January 1880.
John Goodey's age is given as 29 and Mary Ann Watts age is given as 20.
John is described as a Bachelor, and a baker by profession, of 14 Bridgewater Street, St. Mary, Somers Town (in the St. Pancras area of London I believe). His father is Richard Goodey also a Baker by profession.
Mary Ann Watts' is described as a spinster of 42 Judd Street (also in the St. Pancras area I believe). Her father is Frederick Watts (deceased) and was a Tailor by profession according to the certificate. Mary Ann was unable to write and made her mark according to the certificate. The witness both made there marks so I believe they were unable to write also. The witnesses were Robert Goodey (John had a brother Robert and a grandfather Robert Goodey) and Elizabeth Watts.

Now the mysterious part their children!!!

First child John Frederick Goodey, unknown to the later 2 children and their descendants who believed that John Goodey and his wife Mary Ann Watts only had 2 children!!!

I have obtained a birth certificate for a John Frederick Goodey born on 3rd April 1880 (not long after 11th Jan 1880 I know!). His parents are given as John Goodey and Mary Ann Goodey formerly Watts with John Goodey's profession given as Baker. Mary Ann Goodey made her mark and the address given for the birth is given as 14 Bridgewater Street St. Pancras (same address I believe as given by John Goodey when he married Mary Ann Watts). The birth was registered on 11th May 1880.

Second child Louisa Goodey, known by the family as Aunt Minn, according to the birth certificate I have obtained born on 14th August 1888 at 34 Cromer Street Pancras with the father John Goodey profession a baker (journeyman) and Mother Mary Ann Goodey formerly Hunt!!! who made her mark, registered on 18th September 1888. This is known to be Aunt Minn's birthday.

Third child (my grandfather) George Goodey according to his birth certificate born on 27th November 1891 father John Goodey mother Mary Ann Goodey formerly Watts who made her mark and was living at 40 Tonbridge Street Pancras, registered on 6th January 1892.

1. I have struggled to find any parents for Mary Ann Watts.
2. Why is her former name given as Hunt on Aunt Minn's birth certificate?
3. Was the marriage of John Goodey and Mary Ann Watts a shotgun one was Mary Ann Watts previously married to a Mr. Hunt even though she is said to be a spinster on her marriage cert to John Goodey?
4. Why the 8 year gap in children between John Frederick birth and Louisa's birth?

Any help to solve these mysteries would be gratefully appreciated.
