Hi. My gt-gt-grandfather is also named William Watson. He was born around 1813/1814 in Banff. He is definitely not 'yours' because he married Jessie Geddes and lived in Portsoy until he died around 1851. However, I haven't been able to discover his parents.
Maybe you have info that might enable us to 'eliminate' for each other certain sets of potential parents. I also have a contact who is chasing one of the several Forbes Watsons that existed in the area - I'm not sure whether the one you mention is him/her (yes - examples of both sexes...).
Could you e-mail with Forbes Watson date of birth if you know it? And we can go from there.
