I noticed this surname as an associated family in my HOFFMAN-MANNING-SIMMONS FAMILIES OF NY book and thought I'd post the info for any of you researching this line.
Gregory WALZ was a native of BadenBaden, Germany. He married Magdalena SCHOFFMAN.
Their son was:

Edgar Alfred WALZ, rancher and credit man was born at Mankato, Blue Earth Co, Minnesota on 03 March 1859. He was employed in an office in St.Paul and as a telegraph operator on the Chicago and North Western railway. In 1876 he went to Virginia City, NV where he worked as a cashier and bookeeper in a restaraunt. In 1877 he worked in Lincoln, NM. In 1887 he moved to San Diego, California and entered into the fire, accident, and life insurance business. He became associate manager of the far western states in the Equitable Life Insurance Company. He sold his renewals in the insurance business and started the National Hotel Protective Association in 1894. Three years later, he started Walz Credit System and one year later started the Hotel Credit Letter Company.....He married on 11 May 1880 at Mankato, Minnesota to Luella SHAUBUT, daughter of Henry SHAUBUT. Edgar Walz died 04 May 1935 in San Diego, CA.

Shaubut Colet WALZ was born in New Rochelle, NY on 21 April 1896. He was a student at Staunton Military Academy 1909-1911, and graduated from New York Military Academy in 1913. He married Martha Jean MILLIKEN on 07 April 1917. He was President and Director of the Traveletter Corporation, President and Director of Walz Credit Service, Inc. Chairman of the board of Hotel Credit Corporation 1953-1956. He served as cadet Royal Flying Corps 1917-1918. He lived and died in Greenwich, Connecticut.
