The NC Waitman family I'm connected to were originally Weidmans, a Pennsylvania Dutch family who moved into Stokes County NC in the 1780s, living on the Wachovia border near Winston-Salem.

The father of that family was George Waitman (also spelled Weightman), a farmer and shoemaker. He had four daughters and one son, Jacob, who may have been the progenitor of the Davidson County, NC Waitman clan. After George's 1798 death, it appears that his widow, Mary (Anna Maria Unterkoffler), and Jacob may have moved to Davidson County.
