From Vibbert to Bibber: how does this name change?

Hi everyone. I'm just getting back into the geneology pool and I'm picking up where my nephew left off after an exhaustive search. I was lucky enough to stumble on to the "Vibert Family Tree" and "Bibber Family Tree" website and I'm very happy to know that there are a lot of hard working people out there that have helped me by doing their own research. I, in turn, have some research to fill in some of the Bibber gaps.
My question, though, is this: How does the Vibert name become Bibber on my side? Was this a legal name change or was it like the scenario at Ellis Island where names were changed to protect the list makers?
Also, does the name and family line eventually jump to France and beyond?
Please let me know what info is available so that I can peruse the files. I also need to know where to send my family research so that it can be plugged in (transplanted) to the Big Tree.
