You mentioned that "The New World Book of VanFossens" was published by Halbert's Family Heritage. I remember years ago writing for a publication over Foxes which came from Bath, OH. That's where Halbert's used to be. Apparently they are no longer. I found a few references on message boards and Ebay.
I'm not surprized that the crest published was suspect. I purchased online a van Vossen family crest some years ago that was also unlikely. Why it didn't even have a fox.
