Van Alstyne pronunciation

Would someone please tell me how the surname most likely was pronounced in the Mohawk valley mid-18th century? -eene or -eyene? Also, the records I've come across seem to use two words in this country, but a single word back in Holland. Does anyone know whether this apparent separation coincided with immigration, or did later historian/record keepers separate the name parts irregardless of what the Colonial newcomers used?
