I think he could safely be called 'William Griffith Jr.' He's almost certainly the son of the William Griffith who died in 1780, who would be William Griffith Sr.
I say almost because I haven't personally documented it, but from the will in 1780 and the land records I believe it can be done.

William Griffith Jr. (b. 1758), who married Susanna Jones (b. 1765) did have a son named Joseph...and one named Jessee. Joseph was born in 1794 and Jessee in 1805.
