In the left column of the Publish window (The one that list the items you have put into your book.) right click the item whose name you wish to change. Select "Book Item Properties" This gives you get a popup with items that you can control for the Item (Smart Story in your case) In the item name type in the name you want for that item.

In this pop up you can also change the way the item appears in the book. I like each item in my books to start a new chapter, so I click "This item begins a Chapter" This parameter will influence what appears and how it appears in the table of Content.
