I don't know if this will help you any, but origins of the name are below...
Saas
German: variant of Sasse.
nickname for a settler, perhaps a newcomer, from Middle High German saze ‘seat’, ‘residence’.

German and Dutch: variant of Sasse.

When I visited Ukraine last year, we met people by the last name of "Sass", which they pronounced "Shash". I don't know much about that particular family or their origins, just that they live in Western Ukraine, about 1 hour from the Hungarian border.
