There are three dates in UFT, the free form date, the structured date and the sort date. The free form date will print exactly as you entered it in the family journals if you have selected 'As Entered' for the date preference. There is limited space for printing dates on the Family Group sheets and some other reports like the Ancestral Tree therefore UFT prints the stucture date which can be only one date. When you enter a "between" date it appears to put the first date in the structured date. If you enter a double date such as 1654/55 it appears to pick up the second year (1655).
The sort date is used to sort the individuals and events in the various reports. You can modify just the sort date to make children appear in the proper sequence if you wish (or enter a dummy date to make them appear in the proper sequence if no date is known.)
