You asked about the data held in each file. You should print a file list using the Project Summary report available in the Reports menu. This will give you the name of each of your data files, where they are located and what they contain.

As for the file extensions, the .DBF files contain most of the actual data you enter. The .FPT files contain text entered into text windows, such as Biographical Text and Event Text.

The .CDX files are index files. They don't contain actual data, but are important. Not all of the files will have a .FPT and .CDX file associated with them. For example, the image link file and report index files don't contain memo fields for text, so they don't have .FPT files.
