Pioneers of Uvalde

I have an ancestor who was born in 1849, and says on the 1880 Census that he was born in Uvalde County, TX. Now I realize that Uvalde was not Uvalde until 1850, but obviously he was there at the time! Is there any way to find out who the original pioneers of the county were. My ancestor was Joseph F. Fisher, son of Elias J. Fisher. As I said, Joseph was born in 1849, his youngest brother was born in 1860, and there were also three girls born to the family. Elias seems to have disappeared just after the second son was born. Can anyone give me any advice about
where to look for this information? Is there a published list of Uvalde Civil War Soldiers? I have read about a Pioneer Cemetery -- is there a published listing anywhere? All advice is highly appreciated!
