You are right, the 1900 census of ED 101 Justice Precinct 2 (voting precinct 2), Smith, Texas, says that Mary E. Shahan had two children, still living at that time.

I suppose that it is possible that Mary had a child in late 1880-1883, who had left the home by 1900.
Did you also notice that William only aged 10 years in the 20 years between 1880 and 1900. I thought it was women who got younger as they aged.
