When you say they returned to the Valley, it doesn't mean a lot unless you're familiar with the area. Then you mention Bishop-Sinton area and I thought they were both in San Patricio Co, TX, but turns out Bishop is in Nueces Co, TX. So, I went looking for Samuel Conrad and found the names of some of his children.

When you look at this record you will see it is handwritten and I thought the surname looked more like Cave than Cove, and went looking. And, the informant was "Ruth" Mc T___ Might be her sister, see 1910 census.

In 1930 Houston, Harris Co, TX census there is a Harry McElroy 25, b TX with what looks to be a wife and child, writing not real clear, could be the Harry from 1920 census.
Looks like you can add Cave to the circle of people you're searching for. And, if you can read the writing on the DC for Katherine, maybe you can figure out last name for her informant Ruth. Or, maybe it will click a button with your mother or her brother.
