They *should* be on the 1850, but I'm not seeing them, either.I think they are on the 1860 with Charlotte, just using the Peters surname.Here's a little info in case you don't have it:

The 1880 census in Austin County shows Albert married to a Johanna with children Emilia, Charlotte, Albert, Arthur and Otto.1900 Austin County appears to show Johanna as widowed so finding a death certificate for Albert (with parents names listed) doesn’t look likely.

I had thought that I could find one for one of the children (Lewis, Albert or Ida) with the names of parents listed but turned up empty.It looks like Albert died before 1900, so there wouldn't be a certificate for him.
Albert appears to have served in Company G of the 4th Texas Cavalry during the war.I see that widow Johanna Baring filed for a pension based on his service.The application number is 27280 in Colorado County, TX for service of Albert Ernest Baring.These applications would be available from the Texas State Library and may give a little information on Albert...probably not his parents, but perhaps his place of birth.
