Searching for Moses Hutchinson, b 1862 Ireland, imm to Texas

My wife and I are am traveling to Ireland in about a week (June 22, 2009)and we are hoping to locate birthplace and other records for her grandfather, Moses Hutchinson. He was born about 1862 in Ireland of Irish parents. He was Protestant, we suspect he came from Northern Ireland, but that is just a guess. He apparently arrived in the US in 1883 and moved to Houston, Texas where he had a successful clothing business. He is listed in Houston in the 1910 US census. He married a Margaret Hutchinson of Missouri, who was about 18 years younger than he was, and they had 2 children: Margaret H. Hutchinson, educated at Rice U. and who later became the first woman to receive a doctorate in chemical engineering at MIT in Boston. Their other child was Moses Monroe Hutchinson, who was a civilian instructor for USAF pilots in WWII.

Would appreciate any info on any of the above, but especially grandfather Moses Hutchinson.
