I've looked up names in the Huntsville prison records too. Prisoners are enumerated in the federal census (at least I found someone in 1920), and I also looked up the prison records when I visited the Texas State Archives in Austin. The convict records are on microfilm. Since they are microfilmed, I'd guess there's some chance you could get them at an LDS library or maybe even on loan at some county libraries.
