This looks like your Jefferson with a previous wife and child. His age, birth place, and birth location for both parents fits.

1880 census Coffeeville, Yalobusha Co, MS:

Category: Name; Relationship to head of household; Marital Status; Gender; Race; Age; Birthplace; Occupation; Father's Birthplace; Mother's Birthplace.

J. D. COLLINS Self M Male W 25 MS Farmer GA SC
L. W. COLLINS Wife M Female W 19 MS House Keeper GA GA
R. A. COLLINS Other S Male W 1 MS At Home MS MS

You say you found Jefferson on 1910 census, I could not, but did find him and his family on the 1900. That census says both daughters born in LA.

You might try the TX State Archives in Austin, they have a TX state wide death index 1903-1940, see if Jefferson shows up, if so they can give you his date of death and county, too.

Happy Hunting (^_^)
