It gets interesting, Belle shows her parents born in MS on that 1920 census. On the 1860 when Jesse is at home, he and his siblings are listed born MS. On the 1870 when he is in McLennan Co, TX as a student he shows he is born in TX. Do you suppose this J.A. on the 1880 census in Washington Co, TX is Jesse? His age matches exactly with 60 year old Jessi(sic) on 1910, and 70 year old Jesse on 1920 censuses. Wouldn't it be great, as the mother-in-law is living in the household, too.

I would check land records in Washington Co, TX. If Jesse sold any land while his wife was alive, she would have to relinquish her dower right and you would at least get her given name.
Check with TX State Archives in Austin, they have a TX state wide death index 1903-1940, they should be able to give you county and full date of death for Jesse.
Do you know when and where Belle died? Have you obtained a copy of her death certificate? It should show the names of her parents, including her mother's maiden name, if the informant had that knowledge.
