I suggest you find Emma and Jordan on the 1900 census. It asks month and year of birth and usually is a little more accurate then the censuses that ask age at time of census. This would give you when she was born, and then maybe you could narrow down when she might have married husband number one. "If" she was 12 when she married, then her husband died less then a year later, I think 13 would be a little young to start a boarding house. Family stories often take on a life of their own, so be careful. (^_^)

That census will also ask how long married, and if enumerator gets it straight, that will tell you when Jordan and Emma married.

What do you know about Jordan? Age, birth location etc? Here is a "possible" match for Jordan from 1880 census Grayson Co, TX:

Categories: Name; Relationship to head of household; Marital Status; Gender; Race; Age; Birthplace; Occupation; Father's Birthplace Mother's Birthplace.

Are you sure "Mr." Cunningham died less then a year after the marriage? I ask because I wonder about this couple from 1880 Johnsons Station, Tarrant Co, TX. If they married in 1870 she would have been fairly young, probably 16 years old. You might check land and probate records in Tarrant Co, TX, see if this man died shortly after 1880 census. This Emma would be a good age to run a boarding house.

Have you checked 1870 census for any Stanfield family that looks like the right age to be parents of Emma? If you find one, then see if they are on the 1860 census, with Emma still at home. If not in Bartow Co, GA in 1860, look for them elsewhere--track them down.
