Hi Sonja,
I found quite a lot on this family, but some pieces I didn't find that I wanted. =sigh= I'm going to be as brief as I can.

The Family Search Pilot Project has the actual Texas death certificate images for 1894-1976. There are very few death certificate before the law was passed in 1903. And unfortunately, the death certificate law wan't enforced until, well, the 20's and 30's. So it can be hit and miss for those early dates.

I found death certificates for Albert Edmond Ramsey (your Ed):

This states Ludie/Lundy/Londie (can I call her Londie?) had a maiden name of Lane. But hold on!

Found her and Albert (both 43 yrs. old) in the 1900 census in Fannin Co. Texas with their children: Eddie, 19, Willis, 17, Tommie (although it looks like Tannie) 15, John, 13, Moonie/Mamie? 11, Earl, 6, Iva, 3. All children before Earl b. in TN, all after, TX.

Checked death records again for Ed's siblings. Here are Thomas Eli Ramsey, John Hugh Ramsey and who I THINK is Earl:

Notice Thomas's death certificate has her as Lundy Lane Fults.

I think that that's Earl because he is in Hall Co. in 1918 for his WWI Draft registration.

So, here's a backward timeline for you.
1920 Londie is with Ed in Hall Co. John is also in Hall Co. with his wife and children. Thomas is in Delta Co.

1917-1918 (WWI draft registrations)
Thomas is in Delta; says he was born in Fayetteville TN (at least, that's what it looks like) which is in Lincoln Co.
Earl is in Hall Co., says he was born in Bailey Station TX (again, that's what it looks like) I can't find a Bailey Station.
Ed is in Hall Co., no birthplace listed.
John is in Hall Co, said he was born in Federal Tennessee (that's what it looks like) and DIG THIS, he claims his mother as one of his dependents!

1910 Census
Ed and Stella are in Fannin Co. with Lundy. Lundy is listed as a widow., birth pattern TN-TN-TN. This is a hard one to find...Heritage Quest has it misindexed. Also in the household is little sister, Iva.
Thomas is in Collin Co., listed as a boarder
John is in Collin Co., married

1900 --see above

1880 A.N. and L. Ramsey (both 23) are listed in Lincoln Co. TN, with daughter, A. who is 11 months (born in July) and A.N.'s brother-in-law, J. Fultz, who is 9.
There are 2 other Fultz in Lincoln Co. Mrs. Mary, a widow, who is a cook in the home of a J. H. Carey (?) and his sister, Margaret. With her is her 10 year old daughter, Maggie. I will warn you, this page does not appear to be indexed in either Family Search OR Ancestry; I only found it in Heritage Quest. Let me give you the citation for it, so you can find it through a browse function:
1880 TENNESSEE, LINCOLN 12-DIST
Series: T9 Roll: 1267 Page: 159

Sure looks like that her maiden name was Fultz/Fults. But the Lane thing throws me a bit...could it have been a previous marriage? Or is little J. Fultz a step-brother? Or maybe I'm reaching too far.

I looked and looked for a death certificate for Lundy. No luck. She may have died before they really enforced the death certificates.

Anyway, I'm going to leave it there. There are a lot of Fultz/Fults in Tennessee. I hope this helps!

Good luck!
