You've probably seen him on the censuses 1900 Grayson Co, and 1910 Bexar Co. He never shows birth location for parents.

1880 census Sherman, Grayson Co, TX:

Name Relation Marital Status Gender Race Age Birthplace Occupation Father's Birthplace Mother's Birthplace

William J. CHERRY Self M Male W 29 IL R.R. Carpenter --- ---
Sophia CHERRY Wife M Female W 26 MA Keeping House MA MA
Ida CHERRY Dau S Female W 6 IL At Home IL MA

I'm wondering if this is your William, the only William Cherry on his own with right age -- of course, your's could still be living at home with his parents, and wouldn't show up on index.

1870 Henry Co, IL census:

Cherry, Wm., 19, b IL, farmer - listed among the convicts for the jail.

Happy Hunting (^_^)
