My maiden name is SHARP, but as far as I know, most of my SHARP line comes from Madison County, TX. Although I don't have any information about the "Poor Farm" you mention, there are two households of SHARP's listed on the 1880 Coryell, TX County Federal Census including:

SHARP Household 430B
William M., 51, IL
Martha, 49, AL
Richard D., 31, AR
Lucind M., 26, TX
Mary, 23, AL
Curtis, 13, AR
John, 8, AR
James D., 6, TX
Mattie, 5, TX
John W., 3/12, TX

SHARP Household 453B
Adison, 46, TN
Mary F., 39, KY
Nancy S., 12, TX
Samuel A., 10, TX
Mary O., 9, TX
Virginia V., 1, TX

I hope that this helps and isn't duplicating info that you already have! Good luck in your continued search efforts! Please let me know if you have any details of some of your "tree" in Leon or Madison Counties, TX so that we can compare notes!

Kim Sharp Bourke
