Hi Joan,
Since I originally posted, I have found out that John V. Ellis of Bee County, TX was indeed John Vickers Ellis, born in 1834 in Muhlenberg County, KY, AND the brother of my husband's gr-grandmother Susan J. Ellis Shumate.
John and Susan's father's name was Cyprian Ellis and their mother's name was Catherine. It's confirmed that Cyprian Ellis married a Catherine Haydon in 1829 and it is only my supposition at this point that he was married a second time to Catherine Vickers of Muhlenberg Co. sometime prior to John V. Ellis' birth in 1834. Catherine Vickers was the daughter of John Vickers, who was the son of Ralph Vickers. It makes sense to me that that's where the Vickers name came from, but so far I've found no proof.
Thanks so much for the information on John V. Ellis' children and especially thanks for the headups on Texas Death records at familysearch.org. That's a goldmine of information and is very, very helpful.
