Written birth records probably still exist in the archives. But they would be difficult to track down & read, because they would be in the Ottoman-Arabic script. For starters, you would also need to figure out where exactly these people lived in the city, because districts within the city had (& still do) their own archives.
The Greek churches in Istanbul may also have old birth records. You may want to start with them.
