I'm trying to research your family from the details you posted, but I'm not finding any leads.
From your mom's burial site, Amory, MS, I'm wondering if she and her family always resided in MS. I'm not finding any Eunice's in the MS census for 1920 or 1930.
I did find a Eunice Tribble, wife of Frank Tribble, residing in Abbeville, SC in 1930. Does this information ring a bell?
Also, I deducing that since Eunice was born in 1914, had 9 children by 1946, she might have married around 1934 or so (at age 20). Might you have a marriage certificate?
