That is a good question. I remember when I was a child I saw a genealogy book of last names in the library and looked up my last name. It said that Trejo means "the one signals a ceasefire in a battle." I rather like that definition.
When I was in graduate school, I assisted a professor who was researching the earlier years of Nueva Vizcaya - the land that is now Chihuahua and New Mexico. I remember finding references to a "trejo" as the name given to the one who buys and sells trigo.
However, we know that Trejo is an old name and that it existed before the late 1500s. I hope people keep looking because I would like a more definitive answer.
