From reading this it would appear to me that Nicie Stribling is not the mother of William Stone in the 1860 Census for District 2, Madison County, Tennessee.If William Nuckle Stone were her son from a prior marriage then one would think he would have been named in this Will.
Perhaps there is some relationship to the Scribling family or as you suggested the children were farmed out.
I have found that in Madison County, Tennessee Marriages at Tennessee Marriages, 1796-1950 @ https://www.familysearch.org the marriage record for William Stone and Catherine Fry shows the name SCRIBLING along with William Stone.
Without further information from my daughter-in-law's mother (that is if she knows who the parents of William Nuckle Stone are or some information that could lead to who they are) I don't have any answers to how William Stone came to live with the Scribling family, if indead this is the same William Nuckle Stone.
You made a reference to William Stribling and Eunice Black as parents of 9 year old John Stribling.As a suggestion, perhaps Nicie is a nickname for Eunice.
That is all I have right now.Perhaps some of this will help the SCRIBLING family in their research.
