EZ endings in last names, Muslim descent

I heard somewhere that the "EZ's" in last names; such as Suarez, Nuņez, Perez etc. were used by the Spaniards during the Spanish Inquisition to classify the Muslims that where forced to convert to Roman Catholism. Or it may have been added to indicate Moorish descent. Can someone knowledgeable please explain how the ez's originated. I would greatly appreciate it.
