Here is what I've found in the 1900 census record. It seems to be pointing toward the Numa & Celestine Leger theory. It's kind of hard to read, but I think it's your Valcour.

I'm not quite sure if the Berty is Numa or not. I've never seen his name in the church records as Berty. Also, I couldn't tell if the number of years married for Berty and Celestine was 1 or a 1 with some number behind it. Maybe Numa died and Celestine remarried a Berty Sonnier? I'm not too sure. But, anyhow, it seems like the siblings are correct. It looks like the Olphane and Hermogene and Zenon that I found in the church records are in the census record with the correct or nearly correct birthdates. Also, I'm not sure if I gave you this or not, but I have for Celestine's birth:
Volume 7, pg. 289
Leger, Celestine (Celestin & Eugenie Savoie) b. 5 Apr 1863 (CP Ch. v. 1 p. 64)
This matches the Celestine in the census record. I couldn't find Numa's birth record, so I don't know if the May 1857 is correct. Those Sonnier's seem to be a little elusive!
