In researching any surname it is always best to look as all spellings. I have found that to be true in my Kendrick name. In old Wales, and I do mean old, it was origanally spelled Cynric and you then find it spelled Kenrick, Kendrick, Kenderick and even Hendrick. In fact I have seen Sisson spelled Cisson, Sissom and so on. You were right when you said people didn't know how to spell or even read so they spelled it the way it sounded to them.
