I have not followed your particular family line as yet. However, I have been searching all the Silverthorn(e) names in some of the Canadian censuses (not finished this project as yet) and do have a George Silverthorne age 14 that would make his birth about 1838, the year you indicate for your great-grandfather. He is listed as being in the household of Thomas Silverthorne presumably his father and the household is located in Pickering Township. George was born in Canada and is listed as being a labourer. His father Thomas was born ca. 1810-1811 and is a carpenter.
In the "Vital records of Upper Canada/Canada West" v. 11, pt. 1. Home District, 1808-1836 one sees:
Marriages by John Gabraith J.P. #31 (p. 50):
Thomas Silverthorn, to Elizabeth Avery. 16 July 1832. John Galbraith, J.P. Wit. Carlton Lynde and Ichabod Hubbard.
I think this is the same Thomas as found in the 1851 census, and the marriage does link up with the children listed in the 1851 census, the first having been born about 1834.
Elizabeth appears to have died before the 1851 census was taken in Jan 1852. There are 7 children listed in Thomas's household, including George - Jane (b. ca. 1834) ; John (b. ca. 1836) ; George ; Mary (b. ca. 1840) ; William (b. ca. 1842) ; Matilda (b. ca. 1844) ; Deborah (b. ca. 1848).
In 1861 Thomas is living in Carden Twp., Victoria County and is a farmer. Some of the children above are still living with him; others not.
According to "The History of the Silverthorn family", v.2, p. 1140, Thomas is the son of John and Hope (Tuttle) Silverthorn:

6601. Thomas Silverthorn, oldest son & heir-at-law, b. ca. 1811, Bertie Twp., Lincoln Co., Ont. (41/1852); m. ca. 1832, name unkown, who d. ca. 1850; he res. at Uxbridge in 1833, & at Pickering in 1852.
John, in turn, is the son of Thomas Silverthorn, junior, and his wife Rachael Huff. This Thomas is a brother of the John Silverthorn in my message, so to answer your question, your grandmother Rebecca is related to this Silverthorn family - and we are thus distant cousins.
I would be interested in your information on Rebecca's siblings.
