This is a stab in the dark but I have found a will of 1829 with probate 1835, of Thomas Homan victualler Ealing Middlesex, who mentions a George and Ham Sibley sons of Ham and Mary Sibley of Kensington (London). I think they were also victuallers.
I have found the death of a Ham Sibley in 1838, which was probably the father. However, I haven't been able to find any births of Ham Sibley so think it may have been a nickname. Could there be a connection with your wife's family? I think my Homan family lived further north of London until the early 1800s.
