I have had a brief look at the 1881 census information. There is no Ellen Sharrocks born in Somerset in 1879. However, there is one born in 1875 and the information I have is posted below. (This is the only Ellen Sharrocks born in Somerset between 1874 and 1881.)
Interesting that she was living with her grandparent at the time of the census. This might tie up with your assumption that the father (and Grandfather) were working in the Midlands or had moved with little money to an area where there was some work available. Also to back this up is the fact that two other members of the family were boiler makers.
It is an assumption, but I would guess M Jane Sharrocks was Ellen's mother. She is shown as Married rather than Widdowed and no father is residing at the same address. That would make Sarah Parker as your Ellen's Grandmother and the census shows Ellens three other sibblings born and alive at the time the census was taken.
One other thought. If Maria is 10 months old at the time of the census (and given the census address I think this is likely), then you know that this part of the family moved back to Lancashire between 1878 and 1880.
