I am pretty sure that Anderson's father is Jesse. I have a letter written by James A Blair(my gg-grandfather), in which he talks about Anderson Shankle, who he worked for, being the brother of Ellena(eleanor) Shankle(b ~1830), who is my gg-grandmother. I know she is from Panola County Texas and her father was named Jesse Shankle. According to a census for Elena and James Blair, her father, Jesse, came from Alabama and her mother from Tennessee.
Here is an obit, which mentions Ellena's father towards the end as well.
