I found your Joe Shook and his dad, Joe Jr, in Centerville, IA in 1910 census. You may have this information, but here goes:

In that same township (page 129) there is a widowed Joseph Shook that is 72 years from Florida; a brick paver at that age. This same guy shows up in Centerville Twp. in 1920 Series: T625 Roll: 477 Page: 81, finally retired.
THEN: 1920 I found Joe Jr. & family in CO.
