The Sioux Falls library has books called "Polk City Directory." These were done annually and are a census, of sorts, as they alphabetically list working people. You will find a last/first name, residence, occupation and, more often than not, address of occupation. And, as it is done annually, you can narrow down when they appear/disappear.
An e-mail to the library will get a reply as to what you need to do to get a list of Uphoff's or Jibbon's in the Polk Directory's. You'll likely have to pay a small fee for the search, irregardless of the results.
There is a genealogical society about two blocks from the Sioux Falls library but I don't think they would be as much help as the library.
There is also a "state" census, available from the Historical Society in Pierre. This was done in ten year intervals, in between the fed census'. That would be 1895/1905, up to 1945. Again, you would have to hire someone to do the lookup, but it's another source.
