I have been searching for my g grandmother Matilda Mary Scott parents for sometime. I am having the same problem you are about the early census. I believe it is possible she lived in Indian Territory where census were not taken. I have read that once the Territory was "opened" some left and were not on a census until approx. 1900. I do not know if this may be your problem. good luck.
