Knockmore, which is the family address you have given, consists of just 631 acres. In 1856, Griffiths Valuation lists only 108 households there, of which about 4 are occupied by the Ryder family. So with the right name in the right place, in such a small place, it looks like your family to me.
You could check the parish records (Ballynaheglish civil parish) looking for baptisms, or you could speak to the family there today (though unless someone has done the family tree, in my experience they probably won’t know any more than you do, that far back, but you could try).
Roman Catholic marriages in Ireland were only recorded in the statutory registers from 1864 onwards, so for Anne Flynn’s marriage in 1853 you’ll have to rely on parish records, not all of which are on-line.
You mentioned the names Helen and Ellen and that members of the family moved to Scotland. Helen tends to be more common in Scotland and Ellen more common in Ireland. The names are interchangeable, and when women moved back and forth (as they did in huge numbers) they often changed from one to the other depending on the location. So a Helen in Scotland could have been born Ellen in Ireland, and vice versa.
