Morning Jan
This looks as though it is your great-grandfather, as the DoB particularly agrees with your information, on the LDS Family Search site-

Unfortunately the records of that period rarely give the Maiden Name of the mother; who all too frequently is NOT even mentioned!
==================================
As it is from a "record for the locality", you should be able to find it on Scotland's People, the most comprehensive site for Scottish BMDs etc-
www.scotlandspeople.gov.uk
On SP, look in the OPR Births/Baptisms; and you should be able VIEW and Download a Scanned IMAGE of the original 1829 document, complete with spidery writing, blots, tears etc.
=================================
From the above information, this looks like the family in the 1841 Census, being the only one for Drumbeg Assynt with the names John & Jannet appearing in them.
Census ages are frequently out by a year or two, partly due to rounding creep; and partly due to errors on the part of the Head of Household.
"How old is your child Angus?"
"Ach, h's aboot ten, isn't he, Jannet?"
"Aye, he mist be aroond that."
"So I'll put him down as 10."
Alternatively, it could be that the 1829 Angus died very young; and another 1831 Angus was born but not baptised.

The 1851 Census does not give any more children; but there is a Flora Mcleod, Sister-in-Law (to John as Head of Household), suggesting that Jannet was also a McLeod.
========================================
Back on the LDS FS site, there are two John Mcleod Marriages/Banns in the 1820s, in Assynt.
The later one in 1826 seems the more likely, both in date and that the bride is Jannet McLeod-

There is only one obvious possibility in the 1901 Canadian Census, first name recorded as "AgnEs", wife is Margaret K Mcleod.

Index Entry-
McLeod Anges 73 ON BRUCE (West/Ouest) Kincardine (Town/Ville) d-2 10 34
Setails are-
34109 McLeod Anges M(ale)Head M Aug1827 73
35109 McLeod Margret K. F(emale)Wife MDon't Know 1837 64
When the site comes up, select "1901" at top-right corner.
It is a wee bit complicated to use.
Select Ontario.
Follow through; but I found "AngEs" by omitting the First/Given Name, then did a sort on that column.
=====================
I have not found Margaret in the 1911 Census, suggesting she may have moved or died since the 1901 Census.
======================
If you have not obtained copies of the respective Death Records, I would recommend that you do so.
I understand that the Canadian Death Records are similar to the Scottish DRs, giving a lot of extra information, which should help tracing her.
======================
This looks like Angus in the Canadian 1891 Census on the LDS FS site-
Name: Angus Mcleod
Gender: Male
Age: 62
Estimated Birth Year: 1829
Birthplace: Scotland
Marital Status: Married
Religion: Free Church
Province: Ontario
District: Bruce West
District Number: 53
Sub-District: Kincardine Township
Library and Archives Canada Film Number: 30953_148131
I haven't found Margaret in that Census.
There's a lot of McLeods in Ontario!
