I have followed this up further in the USA Census of 1880, available on the LDS FS Site.
In that USA 1880 Census
Turk and Variants
8 - McTurk born in Scotland - no other variants
25 - Turk and immediate variants born in Ireland + 1 Mc Turk
25 - Turk and immediate variants born in England + 2 Mc Turk
1 - McTurk (by Marriage) born in Wales - no other varianst
0- None in the Isle of Man
0- None in the Channel Islands.
Again those results suggest that TURK and immediate variants are unlikely to have any Scottish connections generally, although individual cases may show otherwise.
For comparison-
174 - TURK (with few or no variants, no Mc/Mac) born in Germany
30 - TURK (with few or no variants, no Mc/Mac) born in France
I agree that the 1880 Census would be later than the migrations you have in mind; but the figures do probably give a reasonable indication of likely origins, subject to whatever is found through solid records for individual cases.
Given the rarity of the name TURK in the Scottish Records starting about 1553, if any such name changes took place, very few occurred.
