A Mystery - any suggestions please?

I have George Mitchell b.1801 Old Deer, ABD (according to IGI). My niece has just discovered his grave and that of his wife, Ann Manson, and the inscription indicates that he died in 1862 aged 61.

However, he is also listed on the 1881 Census, a Widower aged 86, with his dtr. Margaret Smith, a lodging hse. keeper in London... I realise there are mistakes on the Census, but how would a long-departed relative have crept in?

Since the graves are indisputable, how can I discover who the George is on the Census? Any suggestions gratefully received. Thank you for your time.
