Patrick SCHENK & Family, Württemberg , Louisiana, 1800s

I am trying to locate information about the family of my great grandmother, Mary Ann SCHENK. Her father was Patrick SCHENK (b. 5 April 1803, d. 17 August 1866). Her brothers and sisters were: Barbara, Joseph, Alois, Paul, Julia, and John. I think that Patrick was married twice because there is secondary evidence that Julia's mother was Crescentia (?) SEIBOLD and that Mary Ann's mother was Grace BALDWIN. U.S. census records for all of the children give Württemberg as their place of birth. I do not know where in Württemberg the family is from.
However, Barbara SCHENK married a baker named John BORST who, according to his tombstone, was born in Ellwagne, Germany on 24 June 1823. This is most probably Ellwangen, Württemberg. They were presumably married in Germany because they came to New York with their two children in 1853. They moved to Springfield, Louisiana, about 1858 where Joseph and Alois already lived. I have not yet been able to locate any immigration records for the other members of the family or to find them on any ship’s passenger list. Patrick, Mary Ann and Julia were also in Springfield, Louisiana.

Mary Ann SCHENK married George WARNER (born about 1838 in Baden according to 1870 U.S. census), but I have not been able to determine when or where they were married. They lived in New Orleans, Louisiana (ca.1866 - 1872) and then in Canton, Mississippi, where George died September 14, 1877. (Beginning with records in Canton and subsequently, the name was spelled WERNER). Family lore suggests that George may have had a brother named Valentine. Mary Ann died 25 March 1922 in New Orleans and is buried in Amite, Louisiana.

The SCHENK family was Catholic. I am seeking birth, marriage, death, immigration records, family history papers, etc. for all of the above.
